Deamidation
A degradation route in which asparagine or glutamine lose their amide group. The mass rises by about 1 Da. Basic pH and heat speed it up.
In the lab
A slightly acidic pH of around 5 to 6 slows deamidation for many peptides. Solutions are therefore often made slightly acidic and kept cold.
